DIY December : Breakfast Casserole

Every year I cook the exact same thing for our Christmas morning breakfast.  Dinner can change, lunch can change, snacks can change but on December 25th, we have to have breakfast casserole.  It is a must and has become expected at the Culver home.  This tradition started with my Grandma Sprenger.  She was a queen of yard sales, crafts, and all things entertaining (notice a pattern?).  At Sprenger Christmas, she always had hashbrown casserole, homemade cinnamon rolls, and that delicious breakfast casserole.  I have to say her and I would be total BFFs if she was still here.  :(  There is no doubt she is looking down and kind of proud of what I am doing.

Ok, enough with the mushy stuff.  I'm sure my Dad is officially bawling!  The great thing about breakfast casserole is that it is easy!  I usually forget to make mine ahead of time and make it that morning.  You can cook your sausage and mix everything the night before.  Just cover and place in frig until your ready to put it in the oven.

INGREDIENTS:

  • 1 # of ground sausage (cooked & drained)
  • 6 eggs
  • 6 slices of bread (diced)
  • 2 cups of milk
  • 2 cups of cheese (any kind but velveeta makes it creamier)                           

Mix all together and bake at 350 for 1 hour in casserole dish (muffin tins and small jars take about 30 minutes).

For Christmas, we usually have 10-20 people eating so I make several of these in casserole dishes.  BUT how cute are the mini ones I did in mason jars?  They would be perfect for the kiddos.  Just make sure you serve them on a small plate so they don't grab the hot glass!

This morning I was literally on my hands and knees snapping pics of these cuties and got a visitor.  It was my Paw Paw (aka Red).  He laughed and wanted to know what in the world I was doing on the ground.  I made him sit in a rocking chair on my porch and sample one of my mini casseroles while I took some shots of him enjoying the yumminess.  He didn't mind at all!  ;)
