On more than one occasion I have had people tilt their head squint their eyes and say, "what exactly do y'all do?".  Everyone knows what a caterer is and what a floral designer is, but many people have never heard of a wedding designer and wonder if it's something that is even necessary.  The best description I've seen someone use is that we are “interior designers” for your wedding.  We strive to create a design and décor concept that reflects you as a couple, and then weave that into every aspect of your day.  Merriam-Webster doesn't have “wedding designer” listed in it's online dictionary, but it does have “interior design”.

“The designer's goal is to produce a coordinated and harmonious whole in which the architecture, site, function, and visual aspects of the interior are unified, pleasing to mind and body, and appropriate to the activities to be pursued there.  Design criteria include harmony of colour, texture, lighting, scale, and proportion.”

Now, replace interior with the word wedding.

The designer's goal is to produce a coordinated and harmonious whole in which the architecture, site, function, and visual aspects of the WEDDING are unified, pleasing to mind and body, and appropriate to the activities to be pursued there.  Design criteria include harmony of colour, texture, lighting, scale, and proportion. (gorgeous flowers and yummy food – ok I may have added that part)
